Why Cointreau?

Cointreau is an orange-flavoured triple sec liqueur. It should be a staple in every home bar, as it is the key ingredient in many co*cktails such as; margaritas, cosmopolitans and many others. One of my go-to co*cktails is the Cointreau fizz- a combination of oranges, cointreau, soda water and mint.

The decision to bake this cake was an easy one to make for several reasons: I have an ongoing love affair with cointreau, plus I love the addition of alcohol in cakes. Finally, this recipe is basically my go-to co*cktail in a cake.

Topping the Cake:

The Icing on this cake is an Orange and Cointreau Syrup accompanied by caramelized orange slices.Not only does the syrup help to keep the cake moist, it also adds flavor which is always good! For those fancy dinners or parties, you can also add caramelized orange slices and be sure to impress your guests.

Ingredients
  • 250gramsbutter(1 cup+2 tbsp)
  • 150gramssugar(¾ cup)
  • 5eggs
  • 250gramsflour(1½ cup flour)
  • ½tspsalt
  • 2½tspbaking powder
  • 5tbspCointreau
  • ¼cuporange juice(squeezed)
  • 1tbsporange rind
  • 1tbspbutter for cake mold
Orange Glaze
  • ½cuporange juice
  • 2tbspcointreau
  • ½cupsugar
Instructions
Preheat oven to 170°c (338°f)
Add baking powder and salt to flour and mix .
With a a cake mixer, mix butter and sugar to a creamy mass. This will take approximately 3minutes.
Add eggs two at a time and mix on high speed between each addition.
Add flour mixture half a cup at a time, cointreau and orange rind.
Pour batter into a buttered and floured 30cm loaf pan.
Bake for 40minutes or till skewer comes out clean.
Orange Cointreau Glaze
Mix sugar, orange juice and cointreau together in a sauce pot and bring to a boil.Let it boil for about 10minutes till it turns translucent and the syrup thickens.
Poke holes into cake with skewer and pour syrup over cake and top with some orange segments.

    Girls, if you are not disabled in any way, make the cake. You'll be glad you did. Do it for disabled people like me who's on oxygen, a continually pumped medicine and deal with true fatigue. I finally made the 2- ingredient lemon bars (Angel food cake mix and 2 jars of lemon curd). They are yummy and it was so fun to send some home with my daughter when she came to change out my medicine pump. It only took me 3 months to get up the knob to do it. If someone who bakes would stop in with samples it would thrill me.

    I'm curious as to size of pan to use and whether it needs to be greased and floured or not.

      I would also like to know the size of loaf pan...looking at equivalent charts has yielded zero info for that.

      As for greased and floured I would just do that anyway as for most cakes (or use Bakers Joy spray).
