…Also known as the Cheesecake that feeds an army. Or a crowd of 20-some.

Hi, GUYS! Happy Monday! Happy 1st day of September! Happy Labor DAY!
WOW! We have SO much to celebrate!!

I’m stickin’ it to the 1st of September by posting the most Summery dessert, ever. In my defense, I had every intention to post this recipe waaaaaay before Labor Day so that you would have a chance to make it FOR Labor Day, but… I didn’t. It completely slipped my mind… too many White Sangria drinks… just kidding! Maybe?

Are you chillaxin’ today? I am! My plan is to wind down on the couch for several hours, or until Goce gets home from work. Working on Labor Day… isn’t Labor Day about NOT going to work?? Something’s not right. Or is it? I mean, Labor Day is kind of anoxymoron because we are essentially celebrating “work” by taking the day OFF from work!Ever think about that?Obviously, I do.

Anywho, after he gets home, I’m going to continue to relax because THEgrill is his.

Also, remember that one time in college when you were asked to bring a huge banana split anything dessert to the huge-est block party?? And then, after everyone ate the whole darn thing, you were pissed off because you didn’t get a chance to try it?! GAH!

Banana Split No Bake Cheesecake Recipe | Diethood (5)

It was THISBanana Split No Bake Cheesecake that I made, thanks to one of those KRAFT mags. I remember it had all the ready-to-go ingredients; from canned pineapples to refrigerated cool whip. It was the easiest, most delicious dessert I had ever made! I even used Jell-O Pudding Snacks instead of buying the instantpudding mix. I was too lazy to whip out one more mixing bowl. 😀

Since then, I have changed the recipe a bit, with most componentsmade from-scratch, but it’s still just as delicious as the original, if not better. Better-for-you, that’s for sure! I even make my own vanilla pudding at times, but only when I am making a smaller batchfor a crowd at home. If I planto take this cheesecake to a potluck type party, I whip out the instant stuff because it’s A LOT quicker. Homemade pudding needs to chill a couple of hours before you can use it. THEN, the whole cake needs to chill another 4 to 5 hours before you can cut it… so that’s that.

If you have some time on your hands, like, starting right now, make this Banana Split NO BAKE Cheesecake – you’ll have an awesome dessert to bring to the grillin’ party later today!

ENJOY!

Vanilla Whipped Cream

  • 1 cup whipping cream
  • 1/2 teaspoon pure vanilla extract

Instructions

Make the Vanilla Pudding

  • (*Skip this step if using instant pudding - See my Notes at the bottom*)

  • Place a mesh strainer over a mixing bowl, preferably a bowl with a spout; set aside.

  • In a saucepan, combine sugar, cornstarch, and salt; whisk until combined.

  • While whisking, slowly add in 1/4 cup of the milk; continue to whisk until smooth.

  • Whisk in the egg yolks and the rest of the milk.

  • Place the saucepan over medium heat and cook, stirring frequently, until mixture begins to bubble, about 5 minutes.

  • Reduce heat to medium-low and, using a rubber spatula, stir constantly, scraping the bottom and sides of the pan, until the pudding thickens and makes ribbons when drizzled over the surface; about 4 minutes.

  • Remove from heat; stir in butter and vanilla extract.

  • Continue to stir until the butter is melted and well incorporated.

  • Pour the pudding through the previously prepared strainer.

  • Transfer to a container and cover with plastic wrap, lightly pressing the plastic wrap over the pudding so to prevent skin from forming.

  • Place in fridge and chill for 2 hours, or until set.

In the meantime, prepare the Vanilla Whipped Cream

  • (*Skip this step if using Cool Whip - see my Notes at the bottom.*)

  • In a mixing bowl, combine whipping cream, vanilla, and sugar.

  • Cover and chill in the refrigerator for 30 minutes.

  • When chilled, beat the mixture until stiff peaks form.

Make Cheesecake

  • In a mixing bowl, combine ground crackers, sugar and melted butter; mix until well combined.

  • Press mixture onto the bottom of a 13x9-inch glass dish.

  • Place in the freezer for 10 minutes.

  • In your mixer's bowl, combine Neufchatel Cheese, honey and vanilla; beat until blended and smooth.

  • Remove crust from the freezer.

  • Spread the cream cheese mixture over the crust.

  • Arrange pineapple chunks over cream cheese mixture.

  • Remove pudding from fridge.

  • Add half of the Vanilla Whipped Cream to the chilled pudding; fold until combined.

  • Using an offset spatula, carefully spread the pudding over the pineapples.

  • Spread the rest of the Vanilla Whipped Cream over the pudding.

  • Refrigerate for 5 hours.

  • Arrange banana slices over dessert and top with chocolate shavings.

    FAQs

What is no bake cheesecake filling made of? ›

Cheesecake is one of my all time favorite summer desserts and it's even incredible when merged with a cake! This 15-minute, no-fuss No Bake Cheesecake Filling for a Cake only has 4 ingredients and is easy to make using cream cheese, confectioners sugar, heavy cream and vanilla.

How do you keep a no-bake cheesecake firm? ›

Refrigerate the cheesecake for at least 6-8 hours, but overnight is better. For a sturdy no-bake cheesecake with beautifully neat slices, refrigerate for at least 12 hours. This makes for a great make-ahead dessert!

    Why didn't my no-bake cheesecake set? ›

That means you need to ensure both the heavy cream and the cream cheese are fridge-cold. If your ingredients are too warm, you'll end up with a soupy mixture that will never set, no matter how long you leave it in the fridge.

Why is my no-bake cheesecake base soggy? ›

I'd say it's too much liquid in the cheesecake batter and it didn't set fast enough and the liquid and moisture got into the base. Baking the base would help, but I guess if you need to bake it then there's no point to make a no bake cheesecake. Buiscuits, butter and a bit of cocoa powder for the base.

Can you eat Philadelphia no bake cheesecake filling? ›

Yes, Philadelphia makes a 24-ounce tub of pre-made cheesecake filling that you can use directly from the fridge—no baking necessary. The tub has everything you want from the sugary, sweet, cream cheese filling of a cheesecake, and it's ready to serve as-is.

How to thicken up a no bake cheesecake? ›

To thicken a no-bake cheesecake, refrigerate it for an extended period or consider adding dissolved gelatin, more cream cheese, or Greek yogurt to the mixture before chilling.

Can you leave no-bake cheesecake out overnight? ›

Thus, cheesecake is perishable. Even if your recipe is traditional in that you bake your cheesecake (no-bake recipes don't contain eggs), once it has had a chance to cool outside the oven (about an hour), it must go back in the fridge.

Should no-bake cheesecake be refrigerated or frozen? ›

Yes! No-bake cheesecake must be refrigerated when it is first made to allow it to set properly. It also requires refrigerating for storage and should not sit out longer than two hours for serving. Any leftovers should also be refrigerated.

Why has my no-bake cheesecake split? ›

Cheesecake can split or curdle for a few reasons – often it's down to the temperature of ingredients. When making cheesecakes (particularly no-bake cheesecakes) the soft cream cheese MUST be full fat, but it should also be at room temperature. However, the double cream should still be cold.

Can you eat a no-bake cheesecake straight away? ›

No-bake cheesecakes may not need an oven, but they do need a refrigerator and several hours to chill before serving. When the filling is still above 50°F (10°C), it's soft, loose, and airy, something like a mousse, with a crust that crumbles a bit more readily.

Can you put no-bake cheesecake in the freezer to set quicker? ›

The filling needs proper chilling, a minimum of four hours but preferably overnight, to set into sliceable sections. Freezing the cheesecake results in a too-hard-to-enjoy crust and filling.

How to fix split cheesecake mix? ›

    Gently Warm The Batter

You can either pour the mixture into a pot at a low temperature or put it in a bowl over warm water. Stir continuously until all the cream cheese lumps are melted, and the mixture is completely smooth. It is also a good method to fix cheesecake batters that are curdled or split.

What to do with a failed cheesecake? ›

Perhaps your kitchen is colder because of weather or your oven has a hot spot. For whatever reason, the cheesecake has cracked despite your best efforts. Remember, your cheesecake is still delicious, so instead of calling it a failed experiment, cover the crack with a delicious topping, like a sour cream coat.

How to prevent soggy bottom cheesecake? ›

    Prevent Soggy Crust

Wrapping the springform pan in foil is known to help, but take it a step further and use plastic wrap (which will not melt!) or slow cooker liner bags as an additional seal.

What are the ingredients in Philly cheesecake filling? ›

Pasteurized Milk And Cream, Sugar, Whey Protein Concentrate, Whey, Modified Food Starch, Contains Less Than 1% Of Salt, Carob Bean Gum, Cheese Powder (Cultured Milk, Salt, Enzymes), Natural Flavor, Butter (Cream), Lactic Acid, Corn Syrup Solids, Buttermilk, Nonfat Milk, Algal Carotenes (Color), Natamycin (a Natural ...

What is the bottom of a cheesecake made of? ›

Cheesecake is a dessert made with a soft fresh cheese (typically cottage cheese, cream cheese, quark or ricotta), eggs, and sugar. It may have a crust or base made from crushed cookies (or digestive biscuits), graham crackers, pastry, or sometimes sponge cake.

Does no bake cheesecake contain gelatin? ›
