Being attached to the stand mixer hub, it has plenty of clearance underneath to guide the pasta along with both hands if/when necessary, unlike the manual crank-arm countertop types. I know this attachment is going to get a lot of use.

Both are great. I've been making pasta for a few years with an old manual machine, which was always a half-day project. With Kitchenaid, it's a breeze. The rollers are also very easy to clean, I didn't even need to use the brush. For people new to pasta making: don't add salt to your dough, as salt prevents gluten development. That's why you add salt to water when you boil the pasta. Also avoid adding olive oil. All you really need is flour (specialty pasta flour works great) and eggs or a combination of whole eggs and egg yolks. If you want to add spinach or beets to your pasta dough, puree them with just a few drops of olive oil.

Rated 5 out of 5 by ZenniBread from GOOD TOOL FOR PASTA-LOVING, CARB-CONSCIOUS PEOPLE Fresh pasta is lower in carbohydrates and the taste is like no other. My spouse is diabetic, but it is controlled. He loves pasta but is required to limit it due to his condition. After a meal with the fresh pasta, he does not see a spike in his blood sugar.
